East Hill Creamery
We are producing Alpine-Style cheeses that truly showcase the flavor of our region. We make cheese using the milk we produce on our own dairy which makes our cheese a unique, pure expression of the Wyoming County pasture our cows graze on. We have a custom-built venue on our second floor featuring dramatic red oak post-and-beam construction, with wood from the land our cows graze. We would love to share our beautiful space with you for your wedding, birthday, or other speacial occasion.

Gary and Betty Burley began farming in 1981 with a small herd of 18 cows on a 100 acre farm on the East Hill in Warsaw, NY. Their five children grew up working alongside their parents on the farm and three of them are still actively involved. They gradually increased their herd and now milk more than 700 cows in a rotational grazing system.
The milking cows walk back and forth from the pasture to the milking parlor twice a day and can often be seen walking under Route 20A through the cattle underpass. Fresh air, sunshine, green grass, attention to details ,animal husbandry, and exercise all contribute to keeping our cows healthy and happy!
Gary and Betty are pursuing their longtime dream to share with the community by producing the value added product that showcases the flavor of our region. Their milk is a unique, pure expression of the pasture, much like the milk produced by the dairies in the Alpine mountain region of France. This region and the cheeses it produces are the inspiration for the high quality, raw milk cheeses that East Hill Creamery produces. Our cheeses are made using much the same process and technique you would find in France.
